Tiramisu is a delicious dessert of Italian origin and well known worldwide. This delight can be made in less than 20 minutes and is perfect for both summer and winter.

Utensils: Hand or electric mixer (preferred), pastry bag, bowls or containers.
INGREDIENTS
Muffins:
- 200 gr of unprepared/all-purpose flour.
- 30 g of cornstarch.
- 1/2 teaspoon of baking powder.
- 1 teaspoon of vanilla essence (optional).
- 6 eggs (separate whites and yolks).
- 140 g of sugar.
For the filling:
- 1 cup of cold coffee
- 6 egg yolks.
- 180 gr of sugar.
- 400 gr of mascarpone cheese or philadelphia cheese.
- 4 teaspoons of rum (to taste).
- 420 ml milk cream.
Decoration:
- Cocoa powder to taste.
PREPARATION
- Muffins:
We started making the muffins.
1. We beat the egg whites until they reach snow point
2. In a bowl or bowl we sift the flour, baking powder and cornstarch.
3. Take another container and enter the yolks and sugar. Beat both ingredients until a cream is created. Add a little bit of the egg whites that we beat at the beginning. Just a little bit, not everything and beat.
4. Now it's time to add what remains of the whites in point of snow and the flours that we sifted in point 2. Shake everything with a spoon or spatula until a creamy mass forms.
Here is an important trick, the ingredients are added by times, that is, we add in a few and move, add and move and so on. If you add everything in a single batch it is likely that the mixture will turn out hard. Remember that the mixture should look like a cream.
5. Enter the homogeneous mixture into the pastry bag. Take a baking base and insert the mixture little by little into the shape of long fingers (the size and thickness of a tequeño). Put it in the oven at 180 degrees for about 12 minutes.
- Filling:
1. Put the egg yolks together with the sugar and beat it until the sugar is completely diluted. Remember that this must be in a bain-marie, that is, the container must be receiving a hot steam.
2. Add the milk cream in a bowl and beat it until it reaches the point of snow, but do not overdo it because otherwise it will end up forming a hard dough.
3. Place the yolks mixed with the sugar and beat it for about 2 minutes and add the philadelphia or mascarpone cheese. You can add vanilla essence but it is not mandatory and continue to integrate the mixture. Reservation.
4. Add the milk cream and continue beating.
5. Take the instant coffee and mix it with water and then submerge the muffins you baked for about 12 minutes.
6. Take a pastry container and put the biscuits (cupcake) on top, bathe them on top with the creamy mixture of philadelphia cheese. Then on top again put another batch of muffins and then on top the filling cream and so on, until the last layer should be covered with white cream. Sprinkle cocoa on that last base and that's it.
