INGREDIENTS
- Potato Huayro - 500 (grams)
- Red Onion - 1 (unit)
- Minced Garlic - 1 (teaspoon)
- Yellow chili paste - 3 (tablespoons)
- Panca pepper paste - 1/2 (teaspoon)
- Oregano - 1/2 (teaspoon)
- Huacatay - 1 (tablespoonful)
- Parsley - 1 (tablespoonful)
- Fresh Serrano Cheese - 100 (grams)
- Broad beans - 1/2 (cup)
- Evaporated Milk - (quantity required)
PREPARATION
- In a saucepan, add 2 tablespoons of vegetable oil, then add 1 finely chopped red onion, fry for 5 minutes
- At the same time, in another pot, boil 500 grams of huayro potato, peel and reserve.
- Then add 1 teaspoon of finely chopped garlic, fry for 5 minutes.
- Add 3 tablespoons of yellow pepper paste and 1/2 teaspoon of chili panca paste. Sauté for 5 minutes.
- Add 1/2 teaspoon of dried oregano, 1/2 cup of peeled beans and 1 cup of water, integrate, cover and cook for 8 minutes.
- Uncover and add the mashed potatoes or cut into cubes, integrate.
- Add 1 tablespoonful of chopped huacatay, 100 grams of fresh cheese in cubes and evaporated milk to taste. Integrate, add salt to taste.
- Finish with a little bit of chopped parsley. Finally, you should serve it hot accompanied by rice.
